No eggs, no dairy Coconut Cranberry Muffins

Ingredients

1 cup white sugar

2/3 cup vegetable oil

14 oz coconut milk

3 cups flour

2 Tablespoons baking powder

1 teaspoon salt

1 teaspoon baking soda

1 cup shredded coconut

1 teaspoon cinnamon

1 teaspoon coconut extract

Top with raw sugar about 3 Tablespoons

 

Preheat oven to 350 degrees Fahrenheit

 

Directions:

Combine sugar & oil, add milk, stir.

Combine flour, baking powder, salt, baking soda, coconut & cinnamon

Add one third dry ingredients to liquid, stir

Add one third dry ingredients & stir

Add last one third dry ingredients & stir.

Ice cream scoop into muffin papers

Top with raw sugar

Bake at 350 degrees for 15-20 minutes.

 

Cool on rack.  ENJOY!
